Ellen Sue Spicer-Jacobson is well-known author and contributor to several national magazines, including Bestways, Mother Earth News, Vegetarian Times, and Whole Life Times. She is an established health advocate and lecturer, as well as the owner of Deep Roots Trading Company, a natural foods distributor in Pennsylvania.
One thing that Ellen Sue noted is that variety in vegetarian meals is important but difficult for many people. She also noted that casserole cooking is very popular in the average home but there are very few meatless casserole recipes around. To fill this void Ellen Sue devoted an entire publication to just meatless casseroles. The Beginner’s Guide to Meatless Casseroles has over 30 recipes and this will allow the vegetarian cooks a variety that is so desperately needed in planning vegetarian meals.
