Tacos are alive, colorful, aromatic, flavorful, fresh, and juicy.
There is also something elegant about their rustic simplicity.
They are basic and simple and yet a complete meal; a small fresh handmade corn tortilla (earthy and somewhat nutty), stewed or grilled meat or vegetables, cilantro, minced onion, salsa (thousands of varieties).
For this cookbook instead of doing traditional handheld tacos, I decided to go even more rustic and do a book on taco soup variations. You can still eat it with a freshly toasted corn tortilla on the side (as they do in Mexico).
