Much of the foods we enjoy today give tribute to the African influence on Southern Cooking. The slave cooks, cooking for their masters, created supreme dishes that have passed the test of time. For example fried green tomatoes. All the food they prepared was created at a time of great personal depravity. They survived without written recipes, controlled cooking temperatures or a system of measurement. A pinch of this, a dash of that or bake until golden brown. This gave birth to Southern Cooking and later was given the name of Soul Food.
