Mexican food has become enormously popular world- wide in recent decades. Tacos, burritos, enchiladas, and salsas fill restaurant menus and grocery store shelves. This “Mexican” food, however, is not at all authentic, such that the rich cuisines of Mexico remain largely unknown and unappreciated outside of Mexico. Mexican Ranch Food: La Cocina de Don Tacho y Doña Ticho presents a very different version of Mexican food: traditional recipes that begin with primary, fresh, locally-grown ingredients that have diverse and novel flavors. The book derives from decades of learning from Don Tacho and Doña Ticho, who were born and raised on a small ranch in western Mexico, and the book presents the cuisine of that ranch in its entirety. Although the recipes are presented with original ingredients from the ranch, options and substitutions are presented so that they are all feasible outside of Mexico.
