Cheese straws are usually associated with the South, and are almost always included in the menu for cocktail parties, bridal or baby showers, and wedding receptions. These tasty little treats can be easily paired with punch, tea, coffee, or wine, and compliment finger sandwiches, fruit, and mints. They are usually made with a strong Cheddar cheese, and can be made in a variety of shapes and sizes, from a true “straw” shape to a flat cheese “biscuit”.
Every cook needs a great cheese straw recipe. The recipe in this book has been handed down through my family and has evolved along the way. While cheese straws can be somewhat labor-intensive to prepare, the end result…a light, buttery crispy cracker…is worth the effort, and you will find that it is exceedingly difficult to eat just one.
