All 3 recipes use ground sirloin as the beef of choice. With traditional beef soups, some variety of steak is used. I prefer to use ground sirloin because it eliminates the need for cutting the steak into chunks before cooking, which will cut down preparation time. However, if ground sirloin is not available, I recommend you use 90% lean hamburg.
