This soup is a favorite of my grandsons Michael and Aiden.
I usually make it with fresh broccoli (of course) yet it is very easy to do with frozen broccoli as well. It is a creamy soup that is just the right consistency to support the finely chopped broccoli. It can also be made with a mixture of broccoli and cauliflower. I served it at a dinner party recently and here is what some of the guests said:
“Good balance. Broccoli reduced at a good level, not too chunky. Liked the light cream.” Donna D.
