Chili Chicken Quinoa
This recipe is a natural super food double whammy as it has quinoa and tomatoes! It is full of flavor and needs little attention so you can put your feet up after work and enjoy a tipple of your choice while waiting for it to cook.
Prep Time: 15 minutes
Cook Time: 60 minutes
Ingredients
2 chicken breasts
½ tbsp olive oil
1 small yellow onion - diced
1 small clove garlic – crushed
½ tsp paprika
1 can chopped tomatoes
1 tsp capers - drained
½ tsp dried oregano
½ tsp chili flakes
Sea salt and freshly ground pepper
¼ cup chicken stock
2oz dry quinoa (rinsed well under cold running water)
Bunch fresh parsley - chopped
Method
1.Heat the oil in a frying pan / skillet over a medium heat then add the chicken breasts and brown on both sides – about 5 minutes
2.Remove the chicken and add the onion, cook on a medium low heat until it has softened then add the garlic chili flakes and paprika – sauté for 1-2 minutes
3.Return the chicken to the pan and add the quinoa, tomatoes, oregano, capers and stock. Season with black pepper
4.Cover and cook for 15 minutes or until the chicken is cooked through and the quinoa is lovely and tender
5.Sprinkle over parsley and serve immediately
