    Cheese is a very versatile food product that can be used as both a savoury and a sweet food. Cheese can be hard or soft and made from milk from cows, sheep and goats. Cheese is made from the proteins and fat in milk. It has rennet added to form curds which are then made into different varieties of cheeses. Some have white or blue/green mould on the outside or throughout the cheese.

    Not all cheese is made the same way. Cheeses such as mozzarella and provolone are stretched in order to get the right stringiness.

    For milder cheeses like Gouda, Edam and Colby the cheese is washed and this gives it a milder flavour.

    Cream cheeses are soft unripened cheeses that are usually spreadable and used on bagels and in making cheesecakes.
