    These are real comfort foods!

    Anyone who thinks that vegetarian foods are not as satisfying or filling as meat meals should try one or two of these delicious and nutritious dishes.

    Most of the dishes listed below are also a lot less expensive than meat meals, quick to make, and almost infinitely adaptable. Change the beans, change the spices, alter the herbs or add some coconut milk, and you have a different dish.

    You can, of course serve them in different ways too - over rice perhaps or with pasta, noodles, cous cous, chunky bread or quinoa ...

    Your imagination, your choice!

    One thing I like about this kind of meal is that you don’t necessarily have to have enough of any one thing to serve everyone - so you can dig up the only small parsnip left, or find the small packet of sweet corn in the freezer, and a few leaves of basil and use it all well.

    Some of the ingredient lists may seem a little long, but you soon build up a suitable store cupboard.

    A Little About Me
    Hi, my name is Susan & my husband Ted and I raised our family of four kids (i.e., three teenagers and one husband!) even as we travelled to various parts of the world while Ted (my husband) was working his way up the corporate ladder

    We started our travels ever since Ted started working, we've lived at various times in continental Europe, Australia, the United Kingdom, and the Far East, which we've come to fall in love with!

    We've travelled through/ lived in Singapore, Thailand, Indonesia, the Philippines, and of course, India & Japan.

    As a result of our itinerant travels, we've been quite fortunate, and blessed to be exposed to a multitude of peoples and cultures, and our two daughters and our son have been exposed to a wide variety of foods as they've grown up. Their regular comment was that they never knew what was brewing in the kitchen, and they didn't care as long as it was tasty!

    My main priority has been raising our kids and maintaining a healthy lifestyle for all of us, and over the course of our travels & journeys, I've learned some amazingly healthy recipes that my family & I enjoy on a regular basis

    I grew up in the West, and have lived in the Far East for a significant portion of my adult life. As a result, I've come to appreciate the Eastern philosophies of holistic thinking and being ... in the East, it is believed that "we become what we consume [1]”

    I plan to write and share what I've learnt by way of integrative vegetarian cooking because I can see first-hand, the difference it has made to my family. My husband's arthritis has all but subsided, and my kids haven’t seen the inside of a hospital in years! (touch wood)

    I believe that this is largely attributable to the effort we've made to enjoy an active, vibrant lifestyle while integrating personal awareness & spiritual growth with our vegetarian diet, and my family are happier, healthier & more energetic because of this.

    I'd consider my (ad)venture successful if you, 'Today's Busy Woman' find that these vegetarian recipes are nutritious, tasty and fast to fix, and that you enjoy rustling them up for yourself and your loved ones & friends
