I have no regrets about any choices I have made in food industry and I have been writing down pretty much anything that I've found useful in my own personal growth. Instead of reading motivational quotes by famous and influential people I opted to write my own and read them every morning at 3 am on my way to the bakery.
I've had many questions about kitchen life and had to figure out on my own many times how to get to where I wanted to be. Motivated by the idea that some folks could benefit from my personal lessons I put a book together.
Initially, I was going to sell it, but I've reformatted the whole book and will be giving it away for free. It’s not all about the money. I am grateful to those who have invested in me as well as for those who stood in my way. New generations of young cooks need some proper guidance and I hope that some of my thoughts will help them along the way.
