    These 24 recipes are designed for the lighter lager and pilsner style beers. Pilsners are a crisp, bitter lager, originated in Bohemia in what is now the Czech Republic. It's a bright and snappy beer with the appetizing sharpness for grilled sausage and the backbone to stand up to spicy Asian flavors and oily fish.
    Lager, made with slower-working bottom fermenting yeasts, has cleaner-tasting and less intense flavor than the fruitier ale. Lagers can range from pale to dark in color, and from light to heavy in body. The rise in regional microbreweries throughout the U.S. and worldwide has led to a wider variety of the style available to us at the supermarket.

    An example of using lagers as well as any style with food can be as easy as substituting beer in place of water or broth in your favorite dishes -- pot roast, for instance, or braised short ribs -- gives them a more complex depth and heartiness. Beer is also great when used in a batter for frying; besides adding malty flavor, its carbonation aerates the batter.
