What is Paleo?
Paleo is not just one of those “diets” that will make you slimmer
and promises you a rush of energy etc. The Paleo diet is not a diet,
but a way of life.

Paleo pancakes
Serves: 4
Ingredients:
-1 egg, whisked
-1 tablespoon coconut milk
-1 tablespoon coconut flour
-¼ teaspoon cinnamon
-¼ ripe banana, mashed
-Small pinch of salt
-¼ teaspoon baking soda
-¼ teaspoon apple cider vinegar
-Some ghee-for frying
Preparation method:
1.Combine mashed banana, egg, coconut milk and apple cider vinegar, until smooth.
2.In another bowl combine coconut flour, cinnamon, baking soda and salt.
3.Fold “dry” mixture into egg mixture and whisk until smooth.
4.Add 1 tablespoon of batter to the pan, per pancake, and cook for 1-2 minutes or until bubbles appear on surface.
5.Gently flip onto the other side and cook for 1 minute more.
6.Serve on a plate and if you want, you may drizzle some honey over the pancakes.
