    Malaysia is home to various ethnic groups which made their way to the country centuries ago and even during the period of European colonization. The Indians and Chinese who migrated then together with the native Malays and Orang Asli form the main ethnic mix of Malaysia and with that came their food which over the centuries, have had an influence over each other and have thus evolved resulting in the uniqueness of the Malaysian cuisine.
    It is therefore not surprising that Malaysia is the food haven for visitors and travelers from around the globe. Malaysian food is not only just a mixture of Chinese, Malay and Indian, it has also been transformed into a style of cooking which is uniquely Malaysian in character.
    From the streets of Kuala Lumpur, the capital of Malaysia, to the streets of Penang Island you find all kinds of delicious food ranging from Roti Canai to Chicken Satay cooked in open air food stalls or in old traditional Malaysian restaurants known as “Kopitiam” served with iced cold tea or warm green tea.
    The intention of this recipe book is to give the readers a taste of what the author believes are the ten most popular Malaysian dishes. Of course, there are more dishes that are as popular, however, these dishes are the ones you would find anywhere in Malaysia without any problems. Having been born in Malaysia and having lived there for 25 years before moving to the UK, has given the author the opportunity to share these dishes with family, friends and colleagues and it is hoped that this recipe book will give you, the reader, the confidence and ability to cook some of the recipes without feeling intimidated by the ingredients listed and the methods shown.
    In fact, most of the ingredients can be found in local supermarket stores, especially in the world food or ethnic food sections. However, some ingredients like tamarind, desiccated coconut, dried shrimp and anchovies, dried chillies, lime leaves, palm sugar, sweet soy sauce (Kicap or Ketjap Manis), flat rice noodles and curry leaves may warrant a trip to the nearest Asian supermarket or store unless these can also be found in your local supermarket store.
    It is hoped that this recipe book will give you the chance to cook and share these wonderful dishes and perhaps even open up a whole new experience of cooking and eating Malaysian food.
