Recipe: Simple and Delicious Macaroni and Cheese
You'll need a grater for cheese or purchase your cheese, pre-grated for convenience.
Ingredients
2 TBSP butter
4-6 cups of whole grain, healthy noodles, pre-cooked
2 cups of sharp cheddar cheese, grated (or cheese of your choice)
3 cups of milk
1 cup frozen peas (fresh is fine, just takes more time)
1-2 dashes of hot sauce
Salt and pepper to taste
½ cup parmesan cheese
2 TBSP butter
4-6 cups of whole grain, healthy noodles, pre-cooked

1 cup frozen peas (fresh is fine, just takes more time)
1-2 dashes of hot sauce
Salt and pepper to taste
½ cup parmesan cheese
Directions - Rub bottom and sides of casserole dish with butter. Mix cooked noodles, grated cheddar cheese, milk and frozen peas together in casserole dish. Add a fewndashes of hot sauce and salt and pepper over the top of the casserole before sprinkling with parmesan.
Bake at 350°F for 30 minutes. If you want the top to be browner, place under the broiler for a minute or two. Dinner is ready!
Total time to prepare: 20 minutes to boil noodles, 10 minutes for remaining tasks. Prepare noodles ahead if possible.
Cooking Time: Approx. 30 minutes
Servings: 2 - 4 per tray
Meal Suggestions: Make Baked Apples (from the book) while reheating your mac and cheese for a delicious second meal.
How to Freeze: Can be frozen in single portions in plastic bags and reheated in the oven (wrapped in foil) or microwaved.
