Most jerky books give you a lot recipes that use many types of meats, beef, buffalo, venison, and so on. Chances are your local grocer does not have anything but beef in their display case! I know mine doesn’t!
Other jerky books give recipes ranging to 25 pounds of meat. I can’t dry that much!
I don’t include recipes for meats you are likely not to have access to, nor in quantities that will not fit in your dehydrator.
