The Mediterranean Diet is a life style that limits the amounts of meat and fowl eaten with more focus on fish, fresh vegetables and fresh fruits. Adopting a Mediterranean diet to our Mexican Meals has been an exciting adventure. We share the recipes with you in this book. There are changes because some of the foods used in Mediterranean cooking are not available in Mexico. In these cases we have found other items that worked just as well. These are Mexican recipes with our health in mind. There are no pictures. Without pictures you are the creating chef. You will dish up some items a little differently than I might but if you follow the recipes, you will still achieve the same great results. I have also left space for you to add notes when possible because we all like to tweak a recipe with something of our own, adding just a pinch of a different spice or herb.
